ASH’S Appetite took a trip to Redland Bay Hotel this week, chasing down what locals have voted Redlands/Bayside’s best parmigianas, and the verdict landed at a confident 7.5 out of 10.

The plate arrived with all the classic comforts.

A generous serve, a golden crumb, and a molten layer of mozzarella that would make any cheese lover grin.

The chicken itself was nicely crispy on the outside, although a little stringy in parts.

It didn’t derail the experience, but it was noticeable enough to suggest the cut of chicken might have been the culprit rather than the cooking.

The red sauce brought a pleasant tang and warmth, although it could have used a touch more punch to really stand out.

A layer of ham added that salty lift a good parmi needs, and the abundance of melted mozzarella (a highlight for me) tied everything together in a gooey, satisfying finish.

What held the experience back wasn’t on the plate, but in the wait.

Despite the venue being busy rather than packed, the food took around 40-50 minutes to arrive.

It’s understandable on a lively night, but still longer than expected and enough to take a little shine off the meal.

Overall, Redland Bay Hotel delivered a parmi that sits comfortably above average, with great cheese coverage, solid texture, and only a few areas for improvement.

A bit more flavour in the sauce and a quicker turnaround in the kitchen could easily push this contender even higher in our rankings.
